When cooking scapes, it's recommended to cut them into small pieces before consuming. This is due to the powerful concentration of salt in the recipe. The likelihood of unfavorable bacteria thriving in that level of salinity is close to none.</p><p>Harissa is incorporated into the equation as a welcome twist to add a kiss of smoky heat. Harissa is a North African spice blend typically made up of red chiles, citrus, garlic, coriander and cumin. Once preserved, the lemon slices capture the essence of these additional aromatics quite nicely. It contributes a multi-dimensional savory flavor alongside a gentle heat, and is commonly used to adorn ramen, udon noodles, tempura and edamame.</p><p>Since mango, chile and lime are such a well-established combination, the idea to lacto-ferment mango pieces with a citrus, chile-based spice blend came to fruition when developing this ferment. The next step was to utilize it to fill the interior of a popular Japanese rice dish, onigiri.</p><p>Onigiri is a triangular or cylindrical piece of white rice and is commonly filled with fish or umeboshi (fermented plum) paste. It is then tossed with snake beans, cherry tomatoes, peanuts and Thai basil.</p><p>When typically making slaw-type vegetable dishes, salt will continue to draw moisture from the produce.
