Chicken Sate with Spicy Peanut Sauce
Ingredients
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 1 teaspoon curry powder
- ½ teaspoon ground turmeric
- 1 teaspoon minced garlic
- ¼ teaspoon ground coriander
- ¼ teaspoon ground cumin
- ½ teaspoon salt
- 2 tablespoons coconut milk
- 2 tablespoons canola oil
- ½ pound skinless, boneless, chicken breasts, sliced diagonally against the grain into 2-inch-wide strips
- Wood skewers, soaked in hot water for 30 minutes
Instructions
- Whisk together the fish sauce, sugar, curry powder, turmeric, garlic, coriander, cumin, salt, coconut milk, and canola oil.
- Add the chicken to the mixture and marinate for 30 minutes.
- Thread chicken onto the skewers. Season with salt.
- Grill the chicken on a well-oiled grill pan over high heat, to sear, or on an outdoor grill over a nice bed of embers until it has a crispy outside but is still tender and opaque inside, 1 to 2 minutes on each side. The meat should not be pink inside.
- Serve with the spicy peanut sauce.
